Classic Cheeseburger

  • 1.5 lb 80/20 ground beef
  • 4 piece American cheese slices
  • 4 piece hamburger buns · brioche or plain potato buns
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter · for toasting buns
  • 4 piece iceberg lettuce · leaves torn to fit bun
  • 1 piece tomato · sliced into 4 rounds
  • dill pickle slices · to taste
  • yellow mustard and ketchup · to taste

    Form the patties

    Divide the ground beef into 4 equal portions (about 6 oz each). Gently press each into a round patty about 3/4 inch thick. Use your thumb to make a shallow dimple in the center of each one — this stops the patty from puffing up as it cooks. Season both sides generously with salt and pepper.

    Toast the buns

    Melt the butter in a large skillet or on a griddle over medium heat. Place the buns cut-side down and toast for 1-2 minutes until golden. Set aside.

    Cook the patties

    Increase the heat to medium-high. Cook the patties in the same skillet for about 3-4 minutes per side without pressing them down. You want a deep brown crust on each side.

    Melt the cheese

    In the last 30-60 seconds of cooking, lay a slice of American cheese on each patty. Cover the skillet with a lid to trap the heat and let the cheese melt fully over the patty.

    Assemble and serve

    Spread ketchup and mustard on the bun halves. Place the cheese-topped patty on the bottom bun, then layer on lettuce, a tomato slice, and pickle slices. Cap with the top bun and serve immediately.
