Soft Scrambled Eggs
Creamy, buttery curds with a silky texture — simple comfort on a plate.

- 4 large eggs
- 2 tbsp whole milk
- 1 tbsp unsalted butter
- 1/4 tsp salt
- 1/8 tsp black pepper · freshly cracked
- 1 tbsp fresh chives · thinly sliced, optional garnish

Whisk the eggs
Crack the eggs into a bowl, add the milk, salt, and pepper. Whisk vigorously until the yolks and whites are fully combined and slightly frothy, about 30 seconds.

Melt the butter low and slow
Place a non-stick skillet over low heat. Add the butter and let it melt slowly until it just starts to foam — do not let it brown.

Pour in the eggs
Pour the egg mixture into the pan. Leave it untouched for about 20 seconds until the edges just begin to set.

Fold into soft curds
Using a rubber spatula, gently push the eggs from the edges toward the center in slow, sweeping folds. Keep the heat on low and move the eggs constantly — you want large, soft, glossy curds. Pull the pan off the heat every 10 seconds or so to control the temperature.

Take off heat just before done
When the eggs look just slightly underdone and still a little wet, remove the pan from the heat entirely. The residual heat will finish cooking them to a creamy, just-set consistency.

Serve immediately
Slide the scrambled eggs onto a warm plate, top with fresh chives if using, and serve straight away with buttered toast.
