Poached Eggs

    Prep the eggs

    Crack each egg into its own small cup or ramekin. This lets you slide them in gently and fish out any shell before they hit the water.

    Bring water to a gentle simmer

    Fill a wide, deep saucepan with about 3 cups of water. Add the salt and vinegar. Heat over medium until you see small bubbles rising steadily from the bottom but no rolling boil — around 180–190°F. Reduce heat to medium-low to hold that simmer.

    Create a gentle swirl

    Use a spoon to stir the water in one direction to form a slow whirlpool. This helps the white wrap around the yolk for a neat shape.

    Slide in the eggs

    Hold each ramekin just above the surface of the water and tip the egg in smoothly. Work in batches of two if your pan is not very wide. Do not drop them from height.

    Poach to your liking

    Let the eggs cook undisturbed for 3 minutes for a very runny yolk, or 3 minutes 30 seconds for a slightly jammy center. The whites should be fully set and opaque with no translucent patches.

    Lift and blot

    Use a slotted spoon to lift each egg out. Rest the spoon briefly on a folded paper towel to blot the water so it does not pool on your toast.

    Serve immediately

    Set the eggs on hot toast or English muffin halves. Season generously with flaky salt and cracked black pepper. Eat right away before the yolk firms up.
