Chicken Stir-Fry with Vegetables

  • 1.5 lb boneless skinless chicken breast · sliced thin against the grain
  • 2 cup broccoli florets
  • 1 red bell pepper · sliced into strips
  • 1 cup snap peas · trimmed
  • 3 garlic · minced
  • 1 tsp fresh ginger · grated, or 0.5 tsp ground ginger
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tsp cornstarch · mixed with 2 tbsp cold water
  • 2 tbsp vegetable oil · divided
  • 1 tsp sesame oil · for finishing
  • cooked white rice · for serving

    Make the sauce

    In a small bowl, stir together the soy sauce, oyster sauce, and cornstarch-water mixture until smooth. Set aside.

    Prep and dry the chicken

    Pat the sliced chicken dry with paper towels. This helps it sear rather than steam in the pan.

    Sear the chicken

    Heat 1 tablespoon of oil in a large skillet or wok over high heat until shimmering. Add chicken in a single layer and cook without moving for 2 minutes until golden. Flip and cook another 1-2 minutes until just cooked through. Transfer to a plate.

    Stir-fry the vegetables

    Add the remaining tablespoon of oil to the same pan over high heat. Add broccoli and bell pepper and stir-fry for 2-3 minutes, tossing constantly, until the broccoli is bright green and slightly tender. Add snap peas, garlic, and ginger and cook for 1 more minute until fragrant.

    Combine and finish

    Return the chicken to the pan and pour the sauce over everything. Toss and stir for 1-2 minutes until the sauce thickens and coats everything in a glossy glaze. Drizzle with sesame oil and remove from heat.

    Spoon over steamed white rice and serve immediately while hot and glossy.
