Homemade Hamburger

Juicy beef patties with a golden-brown sear, melted cheese, and all the fixings on a buttery toasted bun.

Ingrédients

  • 1.5 lb ground beef (80/20)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 American or cheddar cheese · sliced
  • 4 hamburger buns
  • 1 tbsp butter · for toasting buns
  • 4 lettuce · leaves
  • 1 tomato · sliced into 4 rounds
  • 1/2 yellow onion · thinly sliced
  • ketchup and mustard · to serve

    Season and shape patties

    Divide the ground beef into 4 equal portions. Gently form each into a round patty about 3/4 inch thick. Press a shallow dimple in the center of each with your thumb — this keeps them from puffing up. Season both sides generously with salt, pepper, and garlic powder.

    Heat the pan or grill

    Heat a cast-iron skillet or grill pan over medium-high heat until very hot, about 2 minutes. You want a strong sizzle when the patty hits the surface — that's your crust forming.

    Cook the patties

    Place patties in the pan without pressing them down. Cook for 3 to 4 minutes on the first side until a deep brown crust forms. Flip once and cook another 2 to 3 minutes for medium doneness.

    Melt the cheese

    In the last 60 seconds of cooking, lay a cheese slice on each patty. Cover the pan with a lid or foil for 30 to 45 seconds until the cheese is fully melted and starting to drape over the edges.

    Toast the buns

    Remove patties to a plate to rest. Add butter to the same pan over medium heat. Place buns cut-side down and toast for about 1 minute until golden. Watch closely — they brown fast.

    Build and serve

    Spread ketchup and mustard on the bun halves. Layer lettuce on the bottom bun, then the cheesy patty, then tomato and onion slices. Cap with the top bun and serve immediately while the cheese is still molten.
