Egg Salad Sandwich
Creamy, tangy egg salad with rich yolks, crisp celery, and a mustard bite piled high on soft bread.
Ingredientes
- 4 large eggs
- 3 tbsp mayonnaise
- 1 tsp yellow mustard
- 1 celery · finely diced, about 1 stalk
- 1 tsp white or apple cider vinegar
- salt · to taste
- black pepper · to taste
- paprika · pinch, for topping
- 4 sandwich bread · white, wheat, or toasted
- 1 tbsp fresh chives or green onion · thinly sliced, optional

Hard-boil the eggs
Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Once boiling, cover, remove from heat, and let sit for 11 minutes.

Cool and peel
Transfer eggs to a bowl of ice water and let cool for 5 minutes. Peel and roughly chop into small chunks.

Mix the salad
In a bowl, combine the chopped eggs, mayonnaise, mustard, vinegar, and diced celery. Stir gently so some egg chunks remain for texture. Season with salt and black pepper to taste.

Taste and adjust
Taste the egg salad and add a little more mayo if you want it creamier, or another splash of vinegar for extra tang.

Build the sandwiches
Pile the egg salad generously onto 2 slices of bread. Top with a pinch of paprika and chives or green onion if using. Close with the remaining bread slices and serve immediately.
