Sunday Roast Dinner
Herb-crusted beef roasts to juicy, golden perfection alongside crispy potatoes, tender carrots, and a rich, velvety pan gravy.

- 3 lb beef roast (chuck or ribeye) · tied if needed
- 4 garlic · cloves, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 1/2 tsp salt
- 1 tsp black pepper
- 2 lb Yukon Gold potatoes · cut into chunks
- 4 carrots · peeled, cut into sticks
- 2 cup beef broth
- 2 tbsp all-purpose flour · for gravy

Season the beef
Pat the roast dry with paper towels. Mix garlic, olive oil, rosemary, thyme, salt, and pepper into a paste and rub it all over the beef. Let it sit at room temperature for 30 minutes.

Sear the roast
Preheat oven to 425°F. Heat a large oven-safe skillet or roasting pan over high heat. Sear the beef on all sides for 2-3 minutes per side until deeply browned.

Start roasting
Transfer the pan to the oven. Roast at 425°F for 20 minutes to build a crust, then reduce heat to 325°F.

Add potatoes and carrots
Toss potato chunks and carrot sticks with olive oil, salt, and pepper. Scatter them around the beef in the pan. Pour beef broth into the bottom of the pan. Continue roasting for 60-75 minutes until beef reaches 135°F internal for medium-rare.

Rest the beef
Remove the beef and transfer to a cutting board. Tent loosely with foil and rest for 15 minutes. Leave the vegetables in the oven to stay warm.

Make the pan gravy
Place the roasting pan on the stovetop over medium heat. Whisk butter and flour into the pan drippings and cook for 1 minute. Pour in any remaining broth, scraping up the browned bits. Simmer 3-4 minutes, stirring, until thickened. Season with salt and pepper.

Slice and serve
Slice the beef against the grain into thick pieces. Arrange on a platter with the roasted potatoes and carrots. Pour the hot gravy over or serve it alongside.
