Chicken Caesar Salad

Crisp romaine tossed in tangy, creamy Caesar dressing with juicy grilled chicken, crunchy croutons, and shaved Parmesan.

Ingredients

  • 2 piece boneless skinless chicken breasts · pounded to even thickness
  • 3 piece romaine lettuce hearts · chopped into bite-sized pieces
  • 1/2 cup Caesar dressing · store-bought or homemade
  • 1/2 cup Parmesan cheese · freshly shaved or grated
  • 1 1/2 cup croutons · store-bought or homemade
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • salt · to taste
  • black pepper · to taste
  • 1/2 piece lemon · optional, for squeezing over finished salad

Directions

    Season the chicken

    Pat chicken breasts dry with paper towels. Drizzle with olive oil and season both sides with garlic powder, salt, and black pepper.

    Cook the chicken

    Heat a skillet or grill pan over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown and cooked through with no pink inside. Transfer to a cutting board and rest for 5 minutes.

    Slice the chicken

    Slice the rested chicken against the grain into thin strips or bite-sized pieces.

    Prep the romaine

    Wash and dry the romaine hearts thoroughly. Chop into bite-sized pieces and place in a large mixing bowl.

    Dress the salad

    Pour Caesar dressing over the romaine a little at a time, tossing well until every leaf is lightly coated. Add more dressing to taste.

    Assemble and serve

    Divide the dressed romaine among plates or bowls. Top with sliced chicken, croutons, and a generous shower of Parmesan. Squeeze a little lemon over the top if desired and finish with cracked black pepper.
