Ingredients

  • 4 large baking apples (such as Honeycrisp or Granny Smith) · cored, leaving bottom intact
  • 4 tbsp brown sugar · packed
  • 4 tsp unsalted butter · cut into small pieces
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 4 tbsp old-fashioned rolled oats
  • 1/2 cup water or apple cider · for the baking dish

    Preheat oven

    Preheat your oven to 375°F (190°C). Have a baking dish ready that fits the apples snugly upright.

    Core the apples

    Using an apple corer or a melon baller, remove the core from each apple, leaving about half an inch at the bottom so the filling stays in. Peel a thin strip of skin around the top opening if you like.

    Make the filling

    In a small bowl, mix together the brown sugar, cinnamon, nutmeg, and rolled oats until combined.

    Fill the apples

    Stand the apples upright in the baking dish. Spoon the filling evenly into each apple cavity, packing it in gently. Place a teaspoon of butter on top of the filling in each apple.

    Add liquid and bake

    Pour the water or apple cider into the bottom of the baking dish. Bake uncovered for 40 to 45 minutes, until the apples are tender when pierced with a fork and the filling is bubbling. Baste the apples with the pan juices once halfway through if you like.

    Serve

    Let cool for 5 minutes. Serve warm with a spoonful of the caramel pan juices drizzled over the top. Add a scoop of vanilla ice cream or a dollop of whipped cream alongside if desired.
