Baked Potato

Crispy, salty skin on the outside with a fluffy, steaming interior, loaded with butter and cheese.

Ingredients

  • 4 Russet potatoes Ā· large, about 10 to 12 ounces each
  • 2 tbsp olive oil
  • 1 tbsp kosher salt Ā· for sprinkling on the skin
  • 4 tbsp unsalted butter Ā· room temperature
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp chives Ā· freshly chopped
  • 1 tsp black pepper Ā· freshly ground

Directions

    Prep the potatoes

    Preheat your oven to 400 degrees Fahrenheit. Scrub the potatoes clean under running water, then dry them completely with a clean kitchen towel. Poke each potato all over with a fork to let steam escape.

    Oil and salt

    Rub each potato all over with the olive oil. Sprinkle generously with the kosher salt, rolling them to coat the skin evenly.

    Bake

    Place the potatoes directly on the middle oven rack. Bake for 60 minutes, or until the skins are crispy and the potatoes feel tender when squeezed gently with an oven mitt.

    Rest and fluff

    Remove the potatoes from the oven and let them rest for 5 minutes. Make a deep cut down the center of each potato, then push the ends toward the middle to open them up and fluff the inside with a fork.

    Load and serve

    Top each hot potato with a generous pat of butter, a dollop of sour cream, a handful of cheddar cheese, and a sprinkle of chives and black pepper. Serve immediately.
