Sunday Roast Beef
Tender, juicy slices of seasoned beef with a rich, savory crust, perfect for a comforting family dinner.
Ingredients
- 3 lb beef round roast · tied or netted
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp black pepper · freshly ground
- 4 garlic cloves · minced
- 1 yellow onion · thickly sliced
- 1 cup beef broth
- 3 fresh rosemary sprigs
Directions
- 1
Preheat and Prep
Preheat your oven to 325°F. Pat the beef roast completely dry with paper towels to help the seasoning stick.
- 2
Season the Beef
Rub the olive oil all over the beef. In a small bowl, mix the kosher salt, black pepper, minced garlic, and chopped rosemary, then massage the mixture evenly over the entire surface of the meat.
- 3
Build the Base
Place the thickly sliced onions in the bottom of a heavy roasting pan or Dutch oven. Pour the beef broth into the pan around the onions.
- 4
Roast the Beef
Set the seasoned beef directly on top of the onions. Roast in the preheated oven until the internal temperature reaches 135°F for medium-rare, which takes about 90 to 120 minutes depending on the exact shape of your roast.
- 5
Rest and Slice
Remove the roast from the oven and transfer it to a cutting board. Tent it loosely with foil and let it rest for 15 minutes before slicing thinly against the grain.
