25 min4 servings

Ingredients

  • 4 cup whole milk
  • 1/2 cup plain yogurt · must contain live active cultures
  • 1/4 cup granulated sugar · optional
  • 1 tsp vanilla extract · optional
  • 1/8 tsp salt · just a pinch

Directions

  1. 1

    Heat the milk

Heat the milk in a heavy-bottomed saucepan over medium heat until it reaches 180 degrees Fahrenheit, stirring occasionally to prevent scorching.

  2. 2

    Cool the milk

Remove the saucepan from the heat and let the milk cool down to exactly 110 degrees Fahrenheit.

  3. 3

    Add the starter and flavorings

Whisk the plain yogurt, granulated sugar, vanilla extract, and salt into the warm milk until the mixture is completely smooth and fully combined.

  4. 4

    Incubate the yogurt

Pour the mixture into a clean glass jar, cover it, and keep it in a warm place like an oven with just the light on for 8 to 12 hours.

  5. 5

    Chill and set

Transfer the jar to the refrigerator and chill for at least 4 hours to stop the fermentation and thicken the texture.
