Beef and Bean Burrito
A warm, hearty flour tortilla stuffed with savory seasoned beef, creamy refried beans, melted cheese, and crisp fresh toppings.
Ingredients
- 4 piece large flour tortillas · 10-inch size
- 1 lb ground beef · 80/20 blend
- 16 oz refried beans · canned
- 1.5 cup shredded Mexican blend cheese
- 1 package taco seasoning · or 2 tbsp homemade
- 1/4 cup water · for seasoning
- 1/2 cup sour cream
- 1/2 cup mild salsa
- 1 cup shredded iceberg lettuce
- 1/2 cup diced tomatoes
Directions
- 1
Brown the beef
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until fully browned and no pink remains. Drain any excess fat.
- 2
Season the meat
Reduce heat to medium-low. Stir in the taco seasoning and water. Simmer for 3 to 5 minutes until the liquid is absorbed and the meat is well coated.
- 3
Warm the fillings
In a small saucepan, heat the refried beans over medium heat until warm. Microwave the flour tortillas for 15 seconds to make them pliable and prevent tearing.
- 4
Assemble the burritos
Lay a tortilla flat. Spread a layer of warm refried beans down the center, leaving a 2-inch border. Top with the seasoned beef, shredded cheese, lettuce, tomatoes, a dollop of sour cream, and salsa.
- 5
Fold and serve
Fold the left and right sides of the tortilla inward over the filling. Fold the bottom edge up and over the filling, then roll tightly away from you into a cylinder. Slice in half and serve.
